I believe that if ...These would make perfect gifts! I believe that if using all purpose flour, they can last 1 year on the shelf, and if using whole-wheat, they should be used within 4 months. However, you could keep them in the freezer and they will last longer--6 to 8 months. As I understand it, whole grain flours contain more oils that can go rancid over time. (If freezing this mix in jars, wide-mouth jars are considered freezer-safe).
